Fig, pistachio & goat’s cheese on bread

We are in the depths of fig season (August to early October, if you’re in the UK) and while it’s true that there may or may not be dead wasps inside these luscious fruits, it’s best to just try to put that thought to back of your mind and enjoy their sweet, jammy flavours and crunchy seeds.

Besides the great taste, figs are high in potassium, calcium, fibre and iron, which makes them an all round great snack option, but for a light meal, try pairing them with goat’s cheese, crushed pistachios, and the thickest balsamic glaze you can find!

Find a springy bloomer and stack those fig slices on top of your goat’s cheese, building up delicious layers of late summer flavours to enjoy as we gradually usher in autumn. Top with a sprinkle of pistachios and a drizzle of balsamic glaze.

There’s never a bad time for cheese and bread, and even better when you can pair it with something sweet to offset the flavour – so what better sweet than figs?

Ingredients (serves 1)

  • Fresh bloomer (bread)
  • 30g goat’s cheese
  • 2 figs
  • 20g pistachios
  • Thick balsamic glaze

Method

  1. Cut two slices of your bloomer and spread the goat’s cheese equally on both slices.
  2. Using a sharp knife, cut both figs into half-centimetre thick slices, then lay them on top of the goat’s cheese.
  3. Pour the pistachios into a clean tea towel, then fold the towel in half and bash the pistachios until they’re crumbly, but not powdery. Sprinkle the pistachios on top of the figs.
  4. Drizzle your choice of balsamic glaze over the dish, and serve.
